Full Description
Cheng Men, 𪨶门 or "She Gate", is actually a location in Phoenix Mountain at elevation about 900-1000 meters. The name is from the local Chao Zhou dialect which doesn't exist in Mandarin, but the pronunciation sounds similar to the Mandarin word ‘Cheng Men’, which means ‘city gate’. It’s never been classified by fragrance but it leans toward Orchid Aroma, however a lot more bold, rich and sweet. This aged Dan Cong was charcoal roasted twice in 2018 and left untouched since then. One of the benefits or purposes of charcoal roasting is that the tea can age better. Charcoal roasting can keep moisture content in tea leaves under 5%. The ideal moisture content of tea leaves is between 3%-5%, going beyond or lower will cause tea leaves to oxidize and flavor change.
From the coastal area in Canton province, Phoenix Mountain possesses mineral-rich soil and is constantly surrounded by mists and fog, covered by wild tea tress and tea farms, as well as the folklore of the Phoenix Dan Cong Tea. Many wild tea trees are at least 100 to 200 years old. It’s a special type of Oolong treasured for its highly distinctive natural aroma that mimics certain flower or fruit aroma, and is well-known for its ten major aromatic groups. Dan Cong teas are named and classified by their aromas, and the aroma is never artificially added or perfumed but exclusively cultivated as a cultivar.
