This is also a Li Shan, but with a very high withering and fermentation level almost as a black tea, and its taste makes you think of a combination of Dong Ding and Hong Shui. If Li Shan is the queen of Taiwan high mountain oolong, then Li Shan red oolong would be the king. Li Shan tea’s varietal Qing Xin grows at elevation 1900 to 2100m/ 6889ft and Li Shan is one of the most traditionally prestigious teas from this area. Because of the modern preference of a more delicate and mild flavor profile, some local Taiwan tea artisans invented the production method of Li Shan red oolong in 2011, in order to honor the traditional Taiwan oolong tea’s production method as well as to preserve the traditional flavor characteristics (sweet, mellow, rich, fragrant and smooth).
